Preparation
- Peel, core, and chop the apples into small pieces and place them in a pressure cooker or heavy-bottomed pot with 1 cup of water.
- Cook the apples until tender, about 10-15 minutes on the stovetop or less in the pressure cooker.
Combine Ingredients
- Transfer the cooked apples into a heavy-bottomed stock pot and gradually stir in the fruit pectin.
- Bring the mixture to a rolling boil over high heat while stirring constantly.
Add Sweetness and Spice
- Once boiling, add the sugar all at once and stir to dissolve completely.
- Sprinkle in the cinnamon, ground cloves, nutmeg, and allspice, then return to a rolling boil for 1 minute.
Ladle the Jam
- Remove the pot from heat and ladle the hot jam into sterilized containers, leaving space at the top.
- Let the jam sit undisturbed for about 12 hours to set.
- If it hasn't set after 12 hours, give it another 12 hours, then refrigerate for long-term storage.
Canning Option
- Follow the manufacturer’s instructions on sealing the jars for canning.
Notes
Store in a tightly sealed jar in the refrigerator for up to a month. For long-term storage, consider canning or freezing it. Adjust spice levels to taste.
