Method

Preparation
  1. Thinly slice your red onions using a sharp knife or mandoline.
  2. Thinly slice the chili pepper.
  3. Pack the onions: In a wide-mouthed mason jar, tightly pack the sliced red onion, followed by the sliced chili pepper, and sprinkle in the black peppercorns.
  4. Prepare the pickling liquid: In a small saucepan, combine apple cider vinegar, water, sea salt, and sugar.
  5. Heat the mixture over medium heat until the sugar dissolves completely.
  6. Carefully pour the hot vinegar mixture over the packed onions in the jar.
  7. Use a glass or spoon to press the onions down to ensure they are fully submerged in the liquid.
  8. Allow the mixture to set on the countertop for 30-60 minutes.
  9. Transfer and store the pickled onions in a sealed container in the refrigerator.

Notes

Adjust the sugar to your taste for a sweeter brine. Consider adding herbs like cilantro or spices like mustard seeds for variety. Store them in a sealed container for up to two weeks.
