  • 1/3 cup brown sugar Packed tightly; brings a caramelized sweetness.
  • 1/4 cup soy sauce Contributes a savory depth to the marinade.
  • 2 tbsp apple cider vinegar Offers a refreshing tang that enhances flavor.
  • 2 tbsp olive oil Helps to tenderize the chicken.
  • 4 tsp Worcestershire Sauce Adds savory notes to the dish.
  • 4 cloves garlic, minced Elevates the flavor with its pungent qualities.
For the Chicken
  • 700 g chicken thighs, skinless and boneless Provides a creamy, tender bite.

Method

Preparation
  1. In a large bowl, mix together the ketchup, brown sugar, soy sauce, apple cider vinegar, olive oil, Worcestershire sauce, and minced garlic.
  2. Scoop out half a cup of the marinade and set it aside for basting later; this is your 'Glaze.'
  3. Add the chicken thighs to the bowl, ensuring they are well coated in the marinade.
  4. Refrigerate and let them marinate overnight or for a minimum of three hours.
Cooking
  1. Preheat your BBQ grill to medium heat.
  2. Brush the grill with vegetable or canola oil to prevent sticking.
  3. Lift the chicken from the marinade, allowing excess to drip off before placing it on the grill.
  4. Cook the chicken on one side for about four minutes until caramelized brown.
  5. Flip the chicken, generously brush the cooked side with the Glaze, and cook for an additional four minutes.
  6. Flip the chicken again, adding more Glaze each time you turn it until cooked through.
  7. Transfer the chicken to a plate and cover loosely with foil; let it rest for about three minutes before serving.

Notes

For added flavor, sprinkle with fresh parsley before serving. If using a stove, heat a non-stick pan to medium-high and cook chicken in batches.
