Preparation
- In a large bowl, mix together the ketchup, brown sugar, soy sauce, apple cider vinegar, olive oil, Worcestershire sauce, and minced garlic.
- Scoop out half a cup of the marinade and set it aside for basting later; this is your 'Glaze.'
- Add the chicken thighs to the bowl, ensuring they are well coated in the marinade.
- Refrigerate and let them marinate overnight or for a minimum of three hours.
Cooking
- Preheat your BBQ grill to medium heat.
- Brush the grill with vegetable or canola oil to prevent sticking.
- Lift the chicken from the marinade, allowing excess to drip off before placing it on the grill.
- Cook the chicken on one side for about four minutes until caramelized brown.
- Flip the chicken, generously brush the cooked side with the Glaze, and cook for an additional four minutes.
- Flip the chicken again, adding more Glaze each time you turn it until cooked through.
- Transfer the chicken to a plate and cover loosely with foil; let it rest for about three minutes before serving.
Notes
For added flavor, sprinkle with fresh parsley before serving. If using a stove, heat a non-stick pan to medium-high and cook chicken in batches.
