Ingredients

Main Ingredients
  • 1 kg green mangoes Firm and juicy, cut into 4 pieces
  • 1 tablespoon coarse salt Enhances natural flavors and draws out moisture
  • 1 cup granulated sugar Provides sweetness that contrasts with savory components
  • 1 cup water Used to create syrup
  • 1/4 cup white vinegar Adds a sharp bite
  • 1/2 cup vegetable oil Acts as a preserving agent
  • 8 cloves garlic Smashed for aroma
  • 100 grams pickle masala A mixture of spices for depth and character
  • 2 teaspoons ground cumin Offers warm, earthy flavor
  • 2 teaspoons ground coriander Delivers a citrusy undertone
  • 1 teaspoon ground fennel Provides subtle sweetness

Method

Preparation
  1. Cut the mangoes into 4 pieces and rinse them thoroughly to remove impurities. Allow them to drain completely.
  2. Toss the mango pieces with coarse salt and let them rest for about 2 hours.
  3. After soaking, drain the mangoes again and pat them dry with a paper towel. Spread them out and place them in a sunny spot for about 8 hours.
Cooking
  1. In a saucepan, combine granulated sugar and water. Cook until it thickens, forming a single thread when tested.
  2. In a bowl, place the dehydrated mangoes and add vinegar. Heat vegetable oil in a pan and sauté garlic, pickle masala, cumin, coriander, and fennel for about 30 seconds.
  3. Pour the sautéed mixture over the mangoes along with the sugar syrup and mix well.
Storage
  1. Transfer the mango pickle into a large sterilized glass bottle and refrigerate. Allow the flavors to meld for a few days.

Notes

Opt for firm, unripe mangoes for best results. You can customize the pickle masala or adjust the quantity of sugar based on taste preferences. Consider adding red chili powder for heat.
