Preparation
- Cut the mangoes into 4 pieces and rinse them thoroughly to remove impurities. Allow them to drain completely.
- Toss the mango pieces with coarse salt and let them rest for about 2 hours.
- After soaking, drain the mangoes again and pat them dry with a paper towel. Spread them out and place them in a sunny spot for about 8 hours.
Cooking
- In a saucepan, combine granulated sugar and water. Cook until it thickens, forming a single thread when tested.
- In a bowl, place the dehydrated mangoes and add vinegar. Heat vegetable oil in a pan and sauté garlic, pickle masala, cumin, coriander, and fennel for about 30 seconds.
- Pour the sautéed mixture over the mangoes along with the sugar syrup and mix well.
Storage
- Transfer the mango pickle into a large sterilized glass bottle and refrigerate. Allow the flavors to meld for a few days.
Notes
Opt for firm, unripe mangoes for best results. You can customize the pickle masala or adjust the quantity of sugar based on taste preferences. Consider adding red chili powder for heat.
