Ingredients

Chicken Preparation
  • 1 lb chicken breasts juicy and tender
  • 1 teaspoon garlic granules for seasoning
  • 1 teaspoon onion granules for seasoning
  • ½ tablespoon smoked paprika adds smokiness
  • 2 tablespoons cornstarch for thickening
  • Salt and black pepper to taste for seasoning
Sauce and Vegetables
  • ¼ cup olive oil for cooking
  • ½ cup sweet chili sauce for the sauce
  • 1 tablespoon soy sauce adds depth of flavor
  • ½ teaspoon sesame oil for extra flavor
  • 1 large bell pepper chopped into pieces
  • 1 medium onion adds sweetness
  • ½ cup chicken stock or water for moisture

Method

Preparation
  1. Cut the chicken breasts into bite-size pieces.
  2. In a large bowl, combine chicken with smoked paprika, onion granules, garlic granules, cornstarch, salt, and black pepper. Mix well.
Cooking the Chicken
  1. Heat olive oil in a skillet over medium-high heat.
  2. Add chicken pieces in batches and sear for 3-4 minutes on each side until golden brown. Transfer to a plate.
Sautéing the Vegetables
  1. In the same skillet, add chopped onions and bell pepper. Cook for 2-3 minutes until slightly softened.
Making the Sauce
  1. Pour in the chicken stock to deglaze the pan, scraping up any bits stuck to the bottom.
  2. Add sweet chili sauce, soy sauce, and sesame oil. Stir to combine and let it cook for 1-2 minutes.
Final Combination
  1. Return the crispy chicken to the skillet and toss to coat with the sauce.
  2. Cook for another minute until the sauce thickens. Serve over rice or noodles.

Notes

For a deeper flavor, consider marinating the chicken in the sauce for at least 30 minutes before cooking. Add chili flakes for heat.
