  • 1/2 teaspoon ground ginger Offers a warm spice that pairs with the salmon.
  • 1/4 teaspoon garlic powder Adds aromatic notes for a flavorful kick.
  • 2 teaspoons cornstarch Used to thicken the sauce.
Main Ingredients
  • 1 pound salmon fillets Rich in omega-3 fatty acids, the star of the dish.
  • 2 cups cooked rice Provides a hearty base.
  • 1 cup diced pineapple Adds freshness and contrast.
  • 1 cup edamame Provides a crunchy texture and protein.
  • 2 carrots peeled into ribbons Enhances the bowl's appeal.
  • 1 avocado peeled and thinly sliced Balances the dish's flavors.
  • Scallions and sesame seeds for garnish Add color, crunch, and visual appeal.

Method

Teriyaki Sauce
  1. In a small saucepan, whisk together the soy sauce, water, maple syrup, rice vinegar, sriracha, ground ginger, and garlic powder.
  2. Bring this mixture to a boil over medium heat.
  3. In a separate bowl, mix cornstarch with an equal amount of cold water until dissolved. Pour this mixture into the sauce while whisking vigorously.
  4. Lower the heat and let the sauce simmer for about 3-5 minutes, or until it thickens enough to coat the back of a spoon. Remove from heat and set aside.
Baked Salmon
  1. Preheat your oven to 375° F (190° C) and line a baking sheet with parchment paper or foil.
  2. Place the salmon fillet on the prepared baking sheet and brush it generously with 1-2 tablespoons of the teriyaki sauce.
  3. Slide the baking sheet into the preheated oven and bake for 12-20 minutes until the salmon is done.
Assembling the Bowls
  1. Take 1/2 cup of cooked rice and place it in each bowl.
  2. Once the salmon is baked, flake it apart gently with a fork and divide it equally into the bowls.
  3. Top each bowl with edamame, diced pineapple, carrot ribbons, and avocado slices.
  4. Drizzle some additional teriyaki sauce over the top and garnish with scallions and sesame seeds.

Notes

To enhance the teriyaki sauce, add a teaspoon of sesame oil. For a charred flavor, consider grilling the salmon instead of baking. Customize with other vegetables like bell peppers or snap peas.
