  • 8 oz Cremini mushrooms Juicy and meaty, adds depth to your pizza.
  • 1/2 large Sweet onion Natural sweetness caramelizes beautifully when cooked.
  • 4 cloves Garlic, minced Brings a robust aromatic quality.
  • 1/2 tsp Salt Enhances and brings out the natural flavors.
  • Freshly ground black pepper to taste Adds a touch of spice and warmth.
  • 1 sprig Fresh rosemary Adds a stunning fragrance and flavor.

Method

Preparation
  1. Heat the olive oil in a large skillet over medium heat.
  2. Add shiitake and cremini mushrooms, diced sweet onion, and minced garlic.
  3. Sauté until all the water released from the mushrooms evaporates, about 7 to 10 minutes.
  4. Sprinkle in the salt and cook for another 2 to 4 minutes, allowing the mushrooms to stick slightly to the pan.
  5. Turn off the heat and set the mixture aside.
  6. Preheat your oven to 550 ºF and place a baking steel or pizza stone on a rack one-third down from the oven's top.
  7. Remove the pizza dough from the fridge to let it come to room temperature.
Assembly and Baking
  1. Gently stretch the dough to achieve a 10 to 12-inch diameter shape and place it on a lightly floured pizza peel.
  2. Spread a layer of vegan garlic white sauce across the base.
  3. Top with the caramelized mushroom mixture, sprinkle on the vegan mozzarella, and finish with fresh rosemary.
  4. Transfer your pizza onto the baking steel or stone and bake for approximately 8 minutes.
  5. For an extra golden top, turn the heat to broil for an additional 1 to 2 minutes.
  6. Allow pizza to cool for a couple of minutes before slicing.

Notes

Consider adding different herbs like thyme or a balsamic glaze after baking. For gluten-free, use a gluten-free pizza dough.
