Ingredients

Pasta and Base Ingredients
  • 12 ounces pasta (gluten-free linguine, fettuccine, or penne)
  • 2 tablespoons extra virgin olive oil (divided)
  • 3 cloves garlic (minced)
  • 12 ounces frozen artichoke hearts these provide a tender and unique flavor
  • 1 tablespoon capers offering a briny contrast
  • Salt and pepper to taste
  • 2 tablespoons lemon juice approximately the juice of one juicy lemon
  • 1 cup fresh parsley (chopped) for a fresh, herbal note

Method

Preparation
  1. Cook the Pasta: Prepare the pasta according to the package directions until it is al dente. After cooking, drain the pasta and return it to the pot.
  2. Sauté the Garlic: In a skillet over medium heat, heat 1 tablespoon of olive oil. Once hot, add the minced garlic and sauté for about 30 seconds or until fragrant.
  3. Add the Artichokes: Next, add the frozen artichoke hearts to the skillet. Sauté them until they are heated through and achieve a slight brown color on the outside.
  4. Incorporate Capers: Add in the capers, along with salt and pepper to taste. Stir to combine all the flavors.
  5. Combine with Pasta: Transfer the artichoke mixture to the pot with the pasta.
  6. Finish with Lemon and Parsley: Drizzle in the lemon juice and the remaining tablespoon of olive oil. Add the chopped parsley and toss until well combined.
  7. Serve: Plate your Vegan Lemon Artichoke Pasta and enjoy!

Notes

For a creamier texture, consider adding a splash of plant-based cream or cashew cream. Feel free to adjust salt and pepper according to your taste. Experiment with other fresh herbs like basil or oregano for added flavor.
