Ingredients

Crust Ingredients
  • 4 cups grated fresh zucchini Squeeze dry, around 250 g.
  • 2 ounces finely grated Parmigiano-Reggiano cheese Adds a creamy, nutty richness.
  • 8 ounces low-moisture mozzarella cheese Provides a stretchy, gooey texture.
  • 2 eggs Beaten, at room temperature.
  • 2/3 cup tapioca starch/flour Provides structure and helps crust crisps.
  • extra virgin olive oil For drizzling, as needed.
  • 1 tablespoon dried oregano Infuses crust with Italian flavor.
  • 1 1/2 teaspoons dried basil Adds aromatic flavor.
  • 1/2 teaspoon garlic powder For a savory kick.
Toppings
  • tomato sauce For spreading over the crust.
  • additional mozzarella cheese For topping, to taste.
  • gluten-free pepperoni Optional classic topping.
  • sautéed mushrooms Adds earthy richness.

Method

Preparation
  1. Preheat your oven to 450°F (232°C) and place a pizza stone or an overturned baking sheet inside.
  2. Prepare a surface with unbleached parchment paper for easy transferring of the pizza.
  3. In a large mixing bowl, combine grated zucchini, Parmigiano-Reggiano, mozzarella, beaten eggs, tapioca starch, and spices. Mix until thoroughly combined.
  4. Transfer the mixture onto the parchment, spreading into a 13-inch circle, smoothing the edges with wet hands or a spatula.
Baking
  1. Carefully slide the parchment and pizza onto the hot pizza stone or baking sheet.
  2. Bake for about 15 minutes or until the crust is light golden brown.
  3. Remove from the oven and spread desired toppings: tomato sauce, mozzarella, gluten-free pepperoni, and mushrooms.
  4. Return to the oven for an additional 5 minutes until cheese is melted and bubbly.
  5. Allow the pizza to rest for 2 minutes before slicing.

Notes

For best results, use fresh zucchini and squeeze out excess moisture. Pre-grating cheese may lead to less texture; grate cheese yourself. Feel free to experiment with different toppings.
